Turning the pandemic into an opportunity, the team took advantage of the closure to renovate the main restaurant of the hotel, La Citronelle, for an even better experience.
With live cooking areas, dedicated boulangerie-patisserie, a Bistrot corner and a state-of-the-art hot and cold buffet, the restaurant is now an even more tempting place to experience and share epicurean moments.
Taking almost 6months to complete, the revamped La Citronelle restaurant is now more appetizing than ever!
Live cooking stations and sit-up kitchen stations in various locations within the restaurant have been prioritized so that you can choose your ingredients and watch the chefs prepare your meals before your eyes.

The interior design comes to life with a refreshing décor and new ceramic porcelain stoneware tiles. We are the first restaurant in Mauritius to have a gourmet glass box - a walk-in cold kitchen offering everything from fresh juices, cold cuts to appetizers, salads, smoked meat and fish. Another highlight at Constance Belle Mare Plage is the recently restyled rooms. The 104 prestige rooms have undergone a major refurbishment.
A new ambiance with a simple and elegant decor brings freshness to the global concept of the design with some orange touches to lift the room. The bedside tables and the suspended light introduce some Asian inspiration while the other bedside shelf and the sofa give a contemporary nod to its European heritage.

Managed in stages, these works complete a full renovation programme in perfect timing for the

During the Covid pause, Chef Nicolas Baubé took over the reins of the cuisines of Constance Belle Mare Plage as the new Executive Chef. With his expertise and vision of the local cuisine.
His objective: to bring a touch of freshness and innovation to meet the culinary success of Constance Belle Mare Plage.
The Blue Penny Cellar welcomes a new French Chef as well in its kitchen; Chef Florian Rocchietta. The latter worked in a series of exclusive, Michelin-starred restaurants alongside well-known and very influential chefs in France until inspired to oversee the Blue Penny Cellar and to share his passion with the hotel’s team.
Oenophiles will be delighted by the new duo, Chef Florian and Head Sommelier Delores Malin.
Their exclusive menus and wine pairings promise to take you on a sophisticated gastronomic experience. Honoring around 35,000 bottles of more than 2,500 references from around the world, Blue Penny Cellar will leave you enchanted with its cosy atmosphere - brick vaulted ceiling, raw wood, the smell of cork and the perfect temperature for storing wine, with tables where you can sit and immerse yourself in the world of wine!
